One slice is all you need



Mystery Cream Cheese Pecan Pie

1 prepared pie crust ( bigger the better..I used 9" or make your own )

First layer:
1 package (250g) cream cheese - softened
1/3 cup granulated sugar
1 egg
1 teaspoon vanilla
1/2 teaspoon salt
In a bowl beat cream cheese, granulated sugar, egg, vanilla and salt until smooth ( I used my electric beater on a low setting ) and spread over the bottom of pie crust

Second layer:
1 1/4 cups coarsely chopped pecans ( I used pecan halves ) Place over cream cheese, covering completely

Third layer:
1 cup golden corn syrup
3 eggs
1/4 cup packed brown sugar
1 teaspoon vanilla
In a small bowl combine, blend well and pour the mixture gently over the other layers. ( mine overflowed )

Bake at 425F for 10 minutes then reduce heat to 375F and bake 20-25 minutes longer. Cool

Chill well before serving

Oh WOW!!!! That looks SOOOO good Elizabeth. I am salivating at that recipe - probably won't make it, as the only pecan eater in the house would have to eat it all - although watch out unsuspecting inviters who want a plate taken, I say!

Too naughty... must try it soon! Sounds a bit like a winter-with-a-brewed-coffee kinda dish to me. Pity its mid-summer and steaming down here! Thanks for visiting my little blog too.
